Chef Giuseppe Lacorazza
Michelin Bib Gourmand chef Giuseppe Lacorazza, known for his acclaimed Mexico City restaurant Fugaz, will craft a communal menu focusing on place using locally sourced, fresh ingredients available and in season. His culinary approach is deeply rooted in the intersection of tradition and innovation, making him the perfect chef to honor Cisco’s Tex-Mex heritage while fostering dialogue about the cultures and histories coming together over the table.
Robert Björn Taylor
Acclaimed cocktail expert Robert Björn Taylor will elevate the experience with an exclusive LALO Tequila pairing menu. With over 20 years of experience in hospitality, Taylor has played a pivotal role in shaping Austin’s craft cocktail scene, contributing to establishments such as Péché, Qui, Otoko, Emmer & Rye, and Midnight Cowboy. His ability to craft beverages that enhance the flavors of a dish will ensure that every bite is perfectly complemented by an artfully curated sip.
Cisco’s Restaurant, Bakery & Bar
A beloved Austin institution, Cisco’s Restaurant has been a cornerstone of the city’s culinary landscape for 74 years. Known for its classic Tex-Mex dishes and deep cultural significance, Cisco’s remains a gathering place for generations of locals. Recently awarded a $50,000 grant from the National Trust for Historic Preservation, Cisco’s continues to thrive as a vital part of Austin’s cultural fabric. Hosting Sobremesa: Fugaz at Cisco’s honors its historic legacy while bringing it into the contemporary conversation.
LALO Tequila is a fresh take on the art of tequila blanco. Made in Mexico, owned by Mexicans, and celebrated by seekers of the new, LALO Tequila has a deep-rooted commitment to cultural preservation, artistic innovation, and community engagement.

The Sobremesa Experience by Co-Lab Projects is more than just a meal—it is an artistic and cultural exchange. Our extended opening celebrations have long been known as late-night gatherings where creatives, artists, curators, and thinkers come together by the fire, sharing ideas, laughter, and long conversations that spark collaborations. Co-Lab is a late-night nexus of Austin’s creative communities, fostering connections between the city's dynamic artistic voices.
The Sobremesa series is a new initiative that expands upon this spirit, welcoming talented chefs with their own artistic perspectives to interact with Austin’s art and food communities. Each event pairs a distinguished chef with Co-Lab’s diverse slate of programs, creating a communal dining experience that merges food, culture, and contemporary art.
